The Fastest Way to Put Up Greens

Now that the wonderful produce from the garden needs preserving, let’s talk about how to get the job done as fast as possible and get out of that hot kitchen lickety-split.

Today’s vegetable is beet greens, one of our favorite treats. In fact, we love beet greens so much, we planted two rows of them and will not allow them to mature to beets. We will just pull them and use them for greens. These instructions will work well for any type greens you cook, though.

  1. The first step is not to pick the greens, but to heat the blanch water, which takes a long time. If you have an exhaust fan over your stove, you will be glad if you turn it on.

  2. Now pull or cut your greens. I like to lay mine in a bushel basket as I pick them. Here you see them after a light rinsing. Now I place them in a five-gallon bucket and fill with water. After sloshing them around a bit, I place them into the basket again, tip it to allow most of the water out, and take it indoors.

  3. To finish washing greens, I like to use my clothes washing machine. I always wash a bleach load of towels as the last laundry use, so my washer is bleached. Using the large load and gentle rinse setting, I fill it with cold water and add about 1/3 bushel greens. NO SOAP!  I allow it to agitate for 3 to 4 minutes, then stop the cycle and allow it to sit for a few minutes. The greens will float and I scoop them off the top half of the water, into a clean pan or bowl. They will be a bit torn, but we are going to chew them, anyway, right? I then allow the cycle to complete, including the spin portion. (Hint: I always fold or iron clothes while waiting for this, so I do not forget it.)

  4. In the bottom of the washer will be debris, which you should remove and save for your chickens. Then repeat step 3 to rinse another 1/3 bushel. Although this may seem like using too much water, the alternative is to wash them a few at a time in the sink, using at least seven pans of water for each fourth bushel. The mechanized way is much faster, and I don’t think it wastes water.
  5. To prepare your kitchen, gather a couple strainers, one that will work in the boiling pan, and one that will stand in the sink. Fill either a very clean sink, or a large pan or bowl with cold water.

  6. Once the blanch water boils, fill a strainer with raw greens, and carefully lower into water. Cover pan and wait 4 minutes. Using a potholder, raise greens from boiling water and allow to drip a moment. Then plunge blanched greens into the cold water. Stir them gently to help cool quickly. Then transfer to standing strainer to drip before dumping into clean pan or bowl. Repeat this step until all greens are blanched.

  7. I started with a bushel, but ended with this, which the pan says is 8 quarts, but only made six, when packed down.

  8. Box or bag for the freezer, and label with date and contents.

The A-OK Breakfast – Good Ol’ Bacon and Eggs!

Many of us grew up on good ol’ bacon and eggs breakfasts and just the thought brings back such good memories. Yet, I wonder how many know how it’s really done, how to put the sizzle into it without having steam coming out of their ears.

Start with a cold fry pan and crowd the bacon in it, because it will shrink and leftovers are so handy. Heat the pan of bacon slowly. This is what helps prevent shrinking and curling. I use medium heat for bacon.

As spattering begins, I add a lid to keep stray droplets in the pan. This also helps conserve heat, so you may want to turn the burner temperature down a little. Notice the lid is tilted to allow steam to escape. 

This is also a good time to sprinkle with black pepper, if you like.

Once bacon is fried to your liking on one side, use a pair of tongs and turn it over to finish. Add more pepper, if desired. Watch carefully for burning; never use more than medium heat. When done, remove to a plate lined with paper toweling and place in oven set on low, or 150-170 degrees. Allow pan to cool some.

Now it is time for the eggs. Break them into the pan if it is not too hot. You do not want the eggs instantly to bubble and harden. The pan should not be very hot. This is the secret to avoiding “gristle” on the edges of the eggs.

The best spatula for managing the tricky task of turning eggs has a rounded front edge. For this non-stick pan, I use this plastic spatula, which, at these low temperatures is SUPPOSED to be safe. Hope they finally got the truth all straightened out about those topics.

Now comes the test. At our house, one person likes eggs over easy, another likes them broken, flattened, and cooked through. So at this point in cooking the eggs, I pick out the two I feel are most likely to turn out unbroken for the over-easy pair. I choose the two left-most ones. They are ready to turn when the white is mostly gelled. If they are slightly stuck, scoop the spatula under them from all directions, to loosen them, first. Then with the spatula in your dominant hand the and pan handle in the other, tilt the pan slightly to position the spatula under at least half of the egg. Gently tilt the spatula to lift and turn the egg.

If it breaks, you still have three left to try and get it right. This is another of my secrets: turn the over-easy eggs first, so if you break one, it can be for the other person who likes them that way.

Once you have successfully turned the over-easy eggs, you can relax. Turn off the burner under the pan and allow the existing heat to finish the job gently. To hard-cook a fried egg takes longer, so there is no rush to turn the other two, but do break them at this point, so the yolks can run away some.

Remove the over-easy eggs when the bottoms are done. My over-easy egg eater likes the whites hard. You can determine this by pressing gently on the whites, near the yolk, and if it does not give much, then it is fully cooked. At this point, the yolks are very near overdone, so removing them immediately is the next step. The longer you hold them on the plate before serving, the more the yolk cooks, so do try to hurry your eaters to the table.

Finish the fully cooked eggs by flipping them and waiting until they are cooked through. You may want to return the burner setting to low.

Serve with hot coffee and toast.

All My Men Have Been Good to Me – Husband

They hoped he wouldn’t love me, but he did. They predicted we wouldn’t last, but we did. Vietnam tried to separate us, but it didn’t. They said we’d never get anywhere, but we did.

And at least half of it was due to the only man who would give up his seat to me, forty-something years ago.

We were hardly more than children, but love and stubbornness led the way. Milestone after milestone whizzed by until it seemed there was no stopping us.

Bumps in the road gave us strength, new direction, and adaptability, a great combination.

Now, six children homeschooled and raised up and out of the home, mostly it’s just us. And that was really all I needed in the first place—all the rest was frosting.

Buying and selling houses and cars, fixing broken things, building what we lacked, sweating at laboring, always taking the frugal route, he provided, always provided, so I would not have to leave our nest, was free to tend our babes in peace, not harried. I love the life I acquired with this man who spent himself so willingly for my freedom.  

Then there is the wisdom. They say still waters run deep, and for him, it is true. When he spoke, the words were worth listening. When he spoke, other women feared.

And patience. Married to a woman who “needs a mute button”, he always listened, always listens. Always knows the answers to my confusions,

Let the world belittle marriage and commitment! Let them rant against fidelity and sanctity! Let them screw their brows into frowns and suspicions! Let them pretend they are happy without loyalty and truthfulness! Let them blow!

I cannot hear it.

I have spent my whole life with my best friend and would that I had another life to do it all again.

Spring into Cleaning with Efficiency!

As promised, here is the 30-minute way to keep your house “Spring Clean” at all times. Well, almost—so close that eventually you are going to love your house and love this method, okay? Here we go:

  1. Commit one-half hour per day to this method. (This truly is all it takes. Use a timer. More about the time aspect in a few minutes.)
  2. Before you begin, gather what you need for that day’s job. (The half hour is for cleaning, not fetching.)
  3. Start at the front door. (First impressions mean a lot to you and to all who pass your way.)
  4. Hurry. You get more done that way. (You can blitz for 30 minutes—sweat never hurt anyone.)
  5. Scrub, scrub, scrub. Clean, clean, clean. Conquer all mold, dirt buildup, dead bugs, cobwebs, and anything else you find that you don’t like. Accept nothing less than squeaky clean. (Make it like new.)
  6. Repair. Fix that nagging thing that bothers you every time you look at it, if you can. Make note of anything you need to buy or get help with fixing. Don’t let this step slow you down! (You’ll need a notepad in your cleaning supplies.)
  7. If you finish before the half-hour is up, great! Move to the right or left and begin another area. (When the timer stops, you stop.)
  8. Repeat, tomorrow, beginning where you left off. (Rest from all this busyness, one day per week.)

Get it? I hope so. This is all there is to it.

Just pick a starting place, go around the circumference of your house (except the kitchen, which we will discuss next week), and clean like lightning for ½ hour per day. If you will faithfully quit after 30 minutes, you will begin again the next day.

After about a month, you will have a new and wonderful habit. After about a year, you will have a house that has been thoroughly Spring Cleaned.

I know, it is not the conventional Spring Cleaning, but I also know, if you are like me, you will hardly know what to do with such a clean house. And if your house is so big, or your arm is so slow, or your interruptions are so abundant, that it takes you two years to make the rounds, tell me: Did your house ever get Spring Cleaned every two years, before? Hmm? This method is not conventional, but is so much more do-able, that it works.

I’ll have company this weekend, so won’t have time to research famous sayings. What I will do, instead, is take you on a visual tour of a couple days of Spring Cleaning at my house, so you can see exactly what it takes.

Catch-Up Day

Ooh, am I tired!

Yesterday was a catch-up day. Several jobs that had waited long enough finally got my attention. It feels so good to have some of it done.

I started the day with the very last of the lavender harvest from last June. You have to realize I had to be 500 miles away for a couple weeks in June, and on the night before I left, I realized I just had to catch the lavender or it would be blown before I returned. So my husband and I spent probably an hour cutting it and dragging it, in baskets, into the house.

Then I disassembled the daybed in our sunroom and lay the lavender stems over both halves of it to dry. I told my husband he would have to turn it every day or two, so it could dry completely. Bless his heart, he already knew it, from harvesting hay as a boy. What a relief!

When I returned, the lavender was dry and the stripping began. It is not hard, just time-consuming and it bruises your thumb. Now I’ve finally finished that job . It made over two gallons of blossoms, the really good stuff. I’ve already sold thirty dollars worth of it and you can hardly tell it.

Also, I worked at catching up ironing. No one likes when the ironing is behind, around here, but least of all me. I have devised a good way to catch up ironing and thought I’d share it with you, here. It’s not so hard and really works for me.

How to Catch Up on Your Ironing

  1. Hurry. That makes it go much faster.
  2. Set aside time to fire up your iron every day.
  3. Iron twice what your family would wear, every day.
  4. Continue until caught up.

That’s it—so easy. For me, since only my husband wears much ironed clothes, if I iron two shirts and a pair of pants for him each day, soon all is done. Now and then I insert something for someone else, but really, most of us wear no-iron clothing like t-shirts, sweats, and the softer denims. It may take a week or two, but it does work.

Another chore was making sure all the bed linens are clean, since we are expecting lots of company this weekend. Several will stay the night to worship with us. Lots of fun, and I cannot wait.

Lastly, I had a few outdoor chores to finish: mulching around newly-planted trees, bringing potted plants indoors because of a cold-snap, composting some waste vegetation, etc.

Here are a couple shots of our cat, Earl Grey, caught in the act of sampling the catnip. I’d been weeding it, and he caught the aroma. (It smells a lot like cat fur, to me.) Anyway, in the second photo, you can see his face better, in his irritated pose.

Well, I’m off to do some more laundry! Then have an art class today, with a delightful girl with real talent.

Adequacy

Do you ever feel strong, only to find out you’re weak? I sure do.

Today we face troubles with our chickens. A raccoon is eating one per day, starting yesterday. Soon we will have none.

We’ve set a trap where the coon can get in it but the cats cannot. It is smart though, ate the bait, and got out again.

We believe people should protect their penned or cooped animals, since they are at our mercy. What else can they do but die at the hands of this marauder? Sadness creeps in as we think of their terror and understand, now, their reluctance to trust.

Anyway, it falls on the one who is at home to check on the critters hourly, during the day. It’s almost time for the next check. Even if the trap should work, I will have to operate our small rifle because coons don’t die that easily and it would be wrong to make it suffer. Not even tempting.

Although I boasted of knowing how to aim and shoot, I forgot I don’t remember something: which way is off, for the safety button. So is the rifle sitting by the back door, loaded and ready to shoot, or is there one more step to prevent that disappointing “click” that means I forgot something? And will it hurt my shoulder, which has been acting up, lately? And will the creature be in the trap, or warily roaming around the coop? And will I miss? And if I miss, will I hit something else important, like a chicken? And how do I arrive at the chicken coop without our ever-curious cats following?

I was so ready, willing, and able. Now I’ve talked myself into being a wimp. Earlier, I even dreaded and second-guessed the idea of having fresh, organic eggs, at all.

It all reminds me of my curtains. The cost of one panel would buy fabric for the whole house. The test is in making them. Will I finish them?

It reminds me of the ironing. You’d never guess how many starched shirts wait for me to finish that ambitious project. But am I saving money!

It reminds me of refinishing the basement.

It reminds me of redecorating the guest house.

It reminds me of unpacking the last few boxes from moving.

It reminds me of weeding the flower beds.

It reminds me of me.

What makes a boundary that is not good?

  1. It comes from someone who is not over you in authority.
  2. It comes from someone who is not heeding his or her authorities.
  3. It takes over an area of your life not under its authority.

First, when someone tries to set boundaries over or around you and is, himself, not your legitimate authority, you need not heed these boundaries. For instance, if someone else’s husband thinks you should wear your hair a certain way, he’s full of beans! Wearing your hair for someone else’s husband is preposterous. The same would go for someone else’s boss. Only your own boss should be able to tell you what to do on the job and when. This really is simple.

Second, if someone is not minding the law or other authorities over him, he may be out of line for telling you what to do. For instance, a policeman who asked you to rob a bank would be too obviously not one to heed. If your boss asked you to vote a certain way on a jury, that would be similar. Any authority who tried to make you break any law would be contemptible.

Third, the particular areas of your life that are yours, alone, do not fall under any other authorities. Your boss, although he is expected to be over you, still cannot tell you how to feed your children, what TV to watch, when to plant your garden, etc., because it is none of his business.

Also, these scenarios are not truly boundaries; they are bondage. Pay attention and learn to tell the difference.
